Ingredients
Scale
150g active sourdough starter discard
150g all-purpose flour
1 teaspoon instant dry yeast (optional, for faster rise)
1 teaspoon fine sea salt
1 tablespoon olive oil
75ml warm water (or as needed)
Instructions
In a large bowl, combine the sourdough discard, flour, salt, and optional yeast.
Pour in the olive oil and gradually add the warm water, mixing by hand or with a stand mixer until a shaggy dough forms.
Turn the dough out onto a lightly floured surface. Knead for 5 to 7 minutes until the dough is smooth and elastic. If you skip the yeast, knead for 10 minutes.
Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl tightly with plastic wrap.
If using yeast, let the dough rest at room temperature for 30 to 60 minutes until slightly puffy. If skipping yeast, allow a longer rest of 2 to 4 hours for better flavor development, or proceed immediately for a very quick crust.
Preheat your oven and pizza stone (if using) to 500 degrees Fahrenheit (260 degrees Celsius) for at least 30 minutes.
Divide the dough in half (for two medium pizzas). Gently stretch or roll one portion into your desired pizza shape.
Transfer the dough to a pizza peel dusted with cornmeal or semolina. Add your favorite toppings.
Bake for 8 to 12 minutes, or until the crust is golden brown and the cheese is bubbly.
Notes
For a crispier crust, use a pizza stone or steel preheated in the oven.
If you skip the added yeast, the dough will rely solely on the discard’s natural activity, resulting in a slightly denser, tangier, and chewier sourdough discard crust.
This recipe is a great way to practice no waste sourdough baking.
