Ingredients
Scale
6 firm pears (like Bosc or Anjou), peeled, halved, and cored
3 cups dry red wine (such as Merlot or Zinfandel)
1 cup water
3/4 cup granulated sugar
1 cinnamon stick
3 star anise
6 whole cloves
1 strip orange peel (from about 1/4 orange)
Optional: Vanilla ice cream or whipped cream for serving
Instructions
In a large saucepan or Dutch oven, combine the red wine, water, sugar, cinnamon stick, star anise, cloves, and orange peel. Stir to dissolve the sugar.
Bring the mixture to a simmer over medium heat.
Carefully add the prepared pear halves to the simmering liquid, ensuring they are mostly submerged. If needed, you can add a little more wine or water to cover them.
Reduce the heat to low, cover the pan, and gently poach the pears for 20-30 minutes, or until they are tender when pierced with a knife. The cooking time will vary depending on the ripeness of the pears.
Once tender, carefully remove the pears from the poaching liquid using a slotted spoon.
Increase the heat to medium-high and let the poaching liquid simmer and reduce for about 10-15 minutes, until it has thickened into a syrup.
To serve, place two pear halves in each bowl or on a plate. Spoon the reduced red wine syrup over the pears.
Serve warm, with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
Notes
Choose firm pears that will hold their shape during poaching.
Adjust the spices to your preference.
The poaching liquid can be made ahead of time and stored in the refrigerator.
