A warm and encouraging recipe for a Spiced Rosemary Roast Chicken, perfect for festive holiday dinners. This dish brings together the comforting aroma of rosemary with the subtle warmth of winter spices, creating a memorable meal.

Ingredients

Scale
  • 1 whole chicken (about 3-4 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, quartered
  • 4 cloves garlic, smashed

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken dry with paper towels.
  3. In a small bowl, mix together olive oil, chopped rosemary, cinnamon, nutmeg, cloves, salt, and pepper.
  4. Rub the spice mixture all over the chicken, inside and out.
  5. Place the lemon quarters and smashed garlic cloves inside the chicken cavity.
  6. Tie the chicken legs together with kitchen twine, if desired, for a neater presentation.
  7. Place the chicken in a roasting pan.
  8. Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  9. Let the chicken rest for 10-15 minutes before carving.

Notes

  • For extra crispy skin, you can briefly broil the chicken at the end of cooking, watching it closely to prevent burning.
  • Feel free to add other root vegetables like carrots and potatoes to the roasting pan during the last 45 minutes of cooking.
  • Ensure your chicken is fully thawed before roasting for even cooking.
