Spicy Corn Riblets, inspired by Mexican street corn, are a fun and flavorful finger food that’s perfect for cookouts. These corn quarters are grilled until charred and juicy, then coated in spices and cotija cheese for an addictive taste.

Ingredients

Scale
  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt to taste
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. Preheat your grill to medium-high heat.
  2. Cut each ear of corn lengthwise into quarters, creating “riblets.”
  3. In a small bowl, mix together olive oil, chili powder, cumin, smoked paprika, cayenne pepper (if using), and salt.
  4. Brush the corn riblets generously with the spice mixture, ensuring they are well coated.
  5. Place the corn riblets on the preheated grill.
  6. Grill for about 8-10 minutes, turning occasionally, until the corn is tender and charred in spots.
  7. Remove the corn riblets from the grill.
  8. Arrange the corn riblets on a serving platter.
  9. Sprinkle with crumbled cotija cheese and chopped cilantro.
  10. Serve immediately with lime wedges on the side.

Notes

  • Adjust the cayenne pepper to your preferred level of spice.
  • Feta cheese can be substituted for cotija cheese if needed.
  • For a smoky flavor, use smoked paprika.
