Ingredients
Scale
4 ears of corn, husked
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup crumbled cotija cheese
2 tablespoons chopped fresh cilantro
1-2 chipotle peppers in adobo sauce, minced (adjust to your spice preference)
1 teaspoon chili powder, plus more for dusting
1/2 teaspoon smoked paprika
1 clove garlic, minced
1 jalapeño, finely diced (optional, for extra heat)
Lime wedges, for serving
Instructions
Preheat your grill or broiler.
Grill or broil the corn until lightly charred and tender, about 8-10 minutes, turning occasionally.
While the corn is grilling, prepare the spicy crema: In a small bowl, mix together the mayonnaise, sour cream, crumbled cotija cheese, chopped cilantro, minced chipotle peppers, chili powder, smoked paprika, minced garlic, and diced jalapeño (if using).
Once the corn is cooked, let it cool slightly.
Spread a generous layer of the spicy crema over each ear of corn.
Dust with additional chili powder and a little more cotija cheese, if desired.
Serve immediately with lime wedges on the side.
Notes
For a milder spice, reduce the amount of chipotle peppers.
If you don’t have a grill, you can roast the corn in the oven.
Cotija cheese can be substituted with feta cheese if unavailable.
