Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 ears of corn, husked and cleaned
  • 1/4 cup mayonnaise
  • 1/4 cup finely chopped fresh cilantro
  • 2 tablespoons finely chopped fresh jalapeño, seeds removed for less heat
  • 2 tablespoons crumbled cotija cheese
  • 1 tablespoon fresh lime juice
  • Extra chili powder for dusting
  • Extra crumbled cotija cheese for topping
  • Extra chopped cilantro for garnish
  • Extra chopped jalapeño for garnish (optional)

Instructions

  1. In a small bowl, combine the butter, chili powder, cayenne pepper, smoked paprika, garlic powder, onion powder, cumin, oregano, salt, and black pepper. Mix well to create a spicy butter mixture.
  2. Preheat your grill or broiler to medium-high heat.
  3. Brush the corn ears all over with the spicy butter mixture, ensuring an even coating.
  4. Grill or broil the corn for 10-15 minutes, turning occasionally, until the kernels are tender and slightly charred.
  5. While the corn is grilling, in a medium bowl, whisk together the mayonnaise, cilantro, jalapeño, cotija cheese, and lime juice.
  6. Once the corn is cooked, carefully remove it from the grill or broiler.
  7. Spread a generous amount of the mayonnaise mixture over each ear of corn.
  8. Sprinkle with extra chili powder, cotija cheese, cilantro, and jalapeño (if using).
  9. Serve immediately and enjoy the spicy kick!

Notes

  • For an even spicier corn, leave the seeds in the jalapeños or add a dash of your favorite hot sauce to the mayonnaise mixture.
  • If you don’t have a grill, you can roast the corn in the oven at 400°F (200°C) for about 20-25 minutes, turning halfway through.
  • Cotija cheese is a salty, crumbly Mexican cheese. If you can’t find it, feta cheese can be a substitute, though the flavor will be different.
