Ingredients
Scale
1 pound shrimp, peeled and deveined
8 ounces dried egg noodles
2 tablespoons soy sauce
1 tablespoon Shaoxing wine (or dry sherry)
1 tablespoon cornstarch
2 tablespoons chili oil
1 tablespoon Szechuan peppercorns, toasted and ground
1 tablespoon minced ginger
2 cloves garlic, minced
1/4 cup chicken broth
1 tablespoon rice vinegar
1 teaspoon sugar
2 green onions, chopped
1 tablespoon vegetable oil
Instructions
In a small bowl, combine soy sauce, Shaoxing wine, and cornstarch. Add the shrimp and toss to coat. Let it marinate for 10 minutes.
Cook the egg noodles according to package directions. Drain and set aside.
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated shrimp and stir-fry until pink and cooked through, about 2-3 minutes. Remove shrimp from the skillet and set aside.
Add the chili oil, ground Szechuan peppercorns, minced ginger, and minced garlic to the same skillet. Stir-fry for about 30 seconds until fragrant.
Pour in the chicken broth, rice vinegar, and sugar. Bring to a simmer and cook for 1-2 minutes, until the sauce thickens slightly.
Return the cooked shrimp to the skillet. Add the drained noodles and toss everything together to coat evenly with the sauce.
Garnish with chopped green onions before serving.
Notes
For extra spice, add a pinch of red pepper flakes along with the ginger and garlic.
If you don’t have Szechuan peppercorns, you can omit them, but the signature numbing sensation will be less pronounced.
Feel free to add other vegetables like bell peppers or broccoli florets for a more complete meal.
