Ingredients
Scale
1 cup (2 sticks) unsalted butter, browned and cooled slightly
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups granulated sugar
3 large eggs
1/4 cup whole milk
1/4 cup fresh lemon juice
2 tablespoons lemon zest
1 teaspoon vanilla extract
For the Glaze: 2 cups powdered sugar
4 tablespoons fresh lemon juice
1 tablespoon milk
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
Brown the butter: Melt the butter in a light-colored saucepan over medium heat. Continue cooking, swirling often, until the milk solids turn deep brown and the butter smells nutty. Immediately pour the browned butter into a heatproof bowl to stop cooking and let it cool for 10 minutes.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, whisk the cooled browned butter and granulated sugar together until combined.
Beat in the eggs one at a time, mixing well after each addition.
Stir in the lemon juice, lemon zest, and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Gently fold in the milk until the batter is smooth.
Pour the batter into the prepared loaf pan.
Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, loosely tent with foil.
Let the loaf cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
Prepare the glaze: Whisk together the powdered sugar, lemon juice, and milk until smooth and thick.
Drizzle the glaze generously over the completely cooled loaf. Allow the glaze to set before slicing.
Notes
Browning the butter is key for the deep, nutty flavor that mimics a blondie base.
Use fresh lemon juice for the best zesty flavor in both the cake and the glaze.
For a denser, chewier texture, avoid over-creaming the butter and sugar; mix just until incorporated.
