Roast acorn squash halves filled with a flavorful, herby quinoa stuffing. This dish makes a wonderful, festive vegetarian main course.

Ingredients

Scale
  • 2 medium acorn squash
  • 1 tablespoon olive oil, plus more for brushing
  • 1 cup uncooked quinoa, rinsed
  • 2 cups vegetable broth
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 tablespoons chopped fresh thyme
  • 1/4 cup toasted pecans or walnuts, chopped
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Carefully cut the acorn squash in half lengthwise. Scoop out the seeds and stringy pulp.
  3. Brush the cut sides and edges of the squash halves lightly with olive oil. Season with salt and pepper.
  4. Place the squash cut-side down on a baking sheet. Roast for 30 to 40 minutes, or until tender when pierced with a fork.
  5. While the squash roasts, cook the quinoa: Combine the rinsed quinoa and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes, or until all liquid is absorbed. Fluff with a fork.
  6. While the quinoa cooks, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  7. Add the minced garlic to the skillet and cook for 1 minute more until fragrant.
  8. In a bowl, combine the cooked quinoa, onion and garlic mixture, fresh parsley, mint, thyme, toasted nuts, and lemon juice. Season generously with salt and pepper. Mix well.
  9. Once the squash is tender, carefully flip the halves over. Divide the quinoa stuffing evenly among the four squash cavities.
  10. Return the stuffed squash to the oven for an additional 10 minutes to heat the filling through.
  11. Serve warm.

Notes

  • For a richer flavor, toast the pecans or walnuts lightly in a dry pan before chopping.
  • If you prefer, you can substitute vegetable broth with water when cooking the quinoa.
  • This stuffing reheats well, making it good for meal prep.
