Ingredients
Scale
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup fresh or frozen sweet corn kernels, thawed
1/2 cup milk
1 large egg
2 tablespoons melted butter
Vegetable oil, for frying
For the Spicy Aioli:
1/2 cup mayonnaise
1 tablespoon lime juice
1 teaspoon hot sauce (adjust to your spice preference)
1 clove garlic, minced
Pinch of salt
Instructions
Whisk together the flour, baking powder, salt, and pepper in a medium bowl.
In a separate bowl, whisk the milk, egg, and melted butter until combined.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix.
Fold in the sweet corn kernels.
Heat about 1 inch of vegetable oil in a heavy-bottomed skillet over medium-high heat until it reaches 350°F (175°C).
Carefully drop heaping tablespoons of batter into the hot oil, being careful not to crowd the pan.
Fry for 2 to 3 minutes per side, turning once, until the fritters are golden brown and cooked through.
Remove the fritters with a slotted spoon and drain them on a paper towel-lined plate.
While the fritters cool slightly, prepare the aioli. Combine the mayonnaise, lime juice, hot sauce, minced garlic, and a pinch of salt in a small bowl. Stir well.
Serve the warm sweet corn fritters immediately with the spicy aioli for dipping.
Notes
For extra flavor, add one finely chopped jalapeño to the fritter batter.
If you prefer a milder aioli, reduce the amount of hot sauce.
Ensure your oil temperature is correct for the best crispy texture.
