1 large sweet potato, cubed
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon salt
1 (15 ounce) can black beans, rinsed and drained
1 cup cooked rice (brown or white)
1/2 cup salsa
1/4 cup chopped cilantro

Instructions
Preheat your oven to 400°F (200°C).
Toss the cubed sweet potato with olive oil, chili powder, cumin, and salt on a baking sheet.
Roast the sweet potatoes for 20-25 minutes, turning halfway, until tender and slightly caramelized.
Warm the black beans gently on the stovetop or in the microwave.
Assemble your bowls: Start with a base of cooked rice.
Top the rice with the roasted sweet potatoes and warm black beans.
Spoon salsa over the ingredients.
Sprinkle with fresh cilantro.
Add any desired optional toppings like avocado or a squeeze of lime juice.
Notes
You can roast extra sweet potatoes for quick meals later in the week.
Rinsing the black beans removes excess sodium and starch.
