Ingredients

Scale
  • 2 large sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 avocado, sliced
  • 1/2 cup salsa or pico de gallo
  • 1/4 cup chopped fresh cilantro (for dressing)
  • 2 tablespoons lime juice (for dressing)
  • 1/4 cup water (for dressing)
  • 1/4 teaspoon salt (for dressing)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss the diced sweet potatoes with olive oil, chili powder, cumin, smoked paprika, and salt on the baking sheet. Spread them in a single layer.
  3. Roast for 20 to 25 minutes, flipping halfway through, until the sweet potatoes are tender and slightly caramelized.
  4. While the potatoes roast, prepare the cilantro-lime dressing. Combine cilantro, lime juice, water, and salt in a small blender or food processor. Blend until smooth. Add more water if you prefer a thinner consistency.
  5. Assemble your sweet potato taco bowl. Divide the roasted sweet potatoes among serving bowls.
  6. Top each bowl with black beans, thawed corn, salsa, and sliced avocado.
  7. Drizzle generously with the fresh cilantro-lime dressing before serving.

Notes

  • For a vegan option, confirm your salsa does not contain dairy.
  • To make this a protein-packed bowl, add cooked ground turkey or lentils seasoned with taco spices.
  • This recipe works well for meal prepping; store the dressing separately and add it just before eating.
