Enjoy a delicious and satisfying Teriyaki Chicken Stuffed Acorn Squash, a perfect hearty meal that brings together savory chicken and sweet squash.

Ingredients

Scale
  • 1 medium acorn squash
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/4 cup teriyaki sauce
  • 1/4 cup chopped red onion
  • 1/4 cup chopped bell pepper (any color)
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon sesame seeds (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes, or until tender.
  4. While the squash is roasting, heat the olive oil in a skillet over medium-high heat.
  5. Add the chicken pieces and cook until browned on all sides.
  6. Pour in the teriyaki sauce and add the red onion and bell pepper. Cook for another 5-7 minutes, until the chicken is cooked through and the vegetables are tender.
  7. Stir in the fresh cilantro.
  8. Once the squash is tender, carefully flip the halves over.
  9. Spoon the teriyaki chicken mixture into the cavities of the roasted acorn squash.
  10. Garnish with sesame seeds, if desired.
  11. Serve hot.

Notes

  • You can use chicken breast instead of thighs if you prefer.
  • Feel free to add other vegetables like broccoli or mushrooms to the filling.
  • For a spicier kick, add a pinch of red pepper flakes to the chicken mixture.
