Preheat your oven to 400°F (200°C) if baking, or prepare a skillet for pan-searing.
In a small bowl, whisk together soy sauce, mirin, sake, sugar, minced garlic, and grated ginger to make the teriyaki glaze.
Pat the salmon fillet dry with paper towels.
If baking: Place the salmon on a baking sheet. Spoon half of the teriyaki glaze over the salmon. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Spoon the remaining glaze over the salmon during the last few minutes of baking.
If pan-searing: Heat vegetable oil in a skillet over medium-high heat. Place the salmon skin-side down (if applicable) and sear for 4-5 minutes. Flip the salmon and cook for another 4-5 minutes. Pour the teriyaki glaze into the skillet and let it simmer for 1-2 minutes, coating the salmon.
To serve, place cooked rice in a bowl. Top with the teriyaki salmon.
Add your favorite optional toppings such as sesame seeds, chopped green onions, steamed broccoli, or sliced avocado.
Notes
Adjust baking or cooking time based on the thickness of your salmon fillet.
For a thicker glaze, simmer it for a few extra minutes.
Feel free to experiment with different vegetables for your bowl.
