Ingredients

Scale
  • 1 tablespoon coconut oil
  • 1 block (14 ounces) firm or extra-firm tofu, pressed and cubed
  • 1/4 cup Thai green curry paste
  • 1 can (13.5 ounces) full-fat coconut milk
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon brown sugar or maple syrup
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup snap peas or snow peas
  • 1/2 cup sliced carrots
  • Fresh basil leaves, for garnish
  • Cooked rice, for serving

Instructions

  1. Heat coconut oil in a large pot or Dutch oven over medium-high heat. Add tofu cubes and cook until golden brown on all sides. Remove tofu from the pot and set aside.
  2. Add green curry paste to the pot and cook for 1-2 minutes until fragrant, stirring constantly.
  3. Pour in coconut milk and vegetable broth. Stir well to combine with the curry paste.
  4. Bring the mixture to a simmer, then stir in soy sauce and brown sugar.
  5. Add broccoli, bell pepper, snap peas, and carrots to the pot.
  6. Return the cooked tofu to the pot.
  7. Simmer for 5-7 minutes, or until vegetables are tender-crisp.
  8. Serve hot over cooked rice, garnished with fresh basil.

Notes

  • For a spicier curry, add a pinch of red pepper flakes with the curry paste.
  • Feel free to customize with your favorite vegetables like zucchini, mushrooms, or baby corn.
  • Ensure your tofu is well-pressed to achieve a better texture.
