Make this addictive toffee Chex mix for a perfect sweet and salty snack. It is simple to prepare and ideal for parties or holiday gatherings.

Ingredients

Scale
  • 12 cups Chex cereal (mixture of Rice and Corn Chex recommended)
  • 1 cup chopped pecans
  • 1 cup pretzel twists
  • 1 cup (2 sticks) unsalted butter
  • 2 cups packed light brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 250 degrees Fahrenheit. Line two large baking sheets with parchment paper.
  2. In a very large bowl, combine the Chex cereal, pecans, and pretzels. Set aside.
  3. In a medium saucepan, combine the butter, brown sugar, and corn syrup. Heat over medium heat, stirring constantly until the mixture boils.
  4. Once boiling, continue to cook for exactly 1 minute without stirring. Remove from heat immediately.
  5. Stir in the vanilla extract, baking soda, and salt quickly. The mixture will foam up.
  6. Pour the hot toffee mixture evenly over the cereal mixture in the large bowl. Gently stir until all the cereal pieces are coated.
  7. Spread the coated mix onto the prepared baking sheets in a single layer.
  8. Bake for 30 minutes, stirring every 10 minutes to prevent burning and ensure even crisping.
  9. Remove from the oven. If using chocolate chips, immediately sprinkle them over the hot mix. Let it sit for 5 minutes until the chips soften. Gently stir to coat some pieces.
  10. Let the mix cool completely on the baking sheets until crunchy, about 1 hour. Break apart any large clumps before serving or storing.

Notes

  • For a richer flavor, use a mix of different Chex cereals, such as Wheat Chex as well.
  • If you want a stronger toffee flavor, you can substitute 1/4 cup of the brown sugar with granulated sugar.
  • Store the cooled mix in an airtight container at room temperature for up to one week.
