Ingredients
Scale
8 slices thick-cut Brioche or Challah bread
8 oz cream cheese, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract
2 large eggs
1/2 cup milk
1/4 teaspoon ground cinnamon
1 tablespoon butter, for griddle
1 cup mixed berries (fresh or frozen)
2 tablespoons granulated sugar
1 tablespoon water
Optional toppings: maple syrup, extra powdered sugar
Instructions
Mix the softened cream cheese, powdered sugar, and vanilla extract in a small bowl until smooth. This is your cream cheese filling.
Carefully slice a pocket into the side of each bread slice, making sure not to cut all the way through.
Stuff an equal amount of the cream cheese mixture into the pocket of each bread slice.
In a shallow dish, whisk together the eggs, milk, and cinnamon until well combined.
Heat a griddle or large skillet over medium heat and melt the butter.
Dip each stuffed bread slice quickly into the egg mixture, coating both sides lightly. Do not soak the bread.
Place the coated French toast onto the hot griddle. Cook for 3 to 4 minutes per side, until golden brown and the filling is warm.
While the toast cooks, make the compote: Combine the mixed berries, granulated sugar, and water in a small saucepan.
Cook the berry mixture over medium heat, stirring occasionally, until the berries break down and the sauce thickens slightly, about 5 to 7 minutes.
Plate the stuffed French toast immediately. Spoon the warm berry compote generously over the top.
Drizzle with maple syrup and dust with extra powdered sugar before serving.
Notes
Use day-old bread for the best texture; it absorbs the egg mixture without becoming soggy.
For an extra touch of flavor, add a pinch of lemon zest to the cream cheese filling.
If your griddle is small, cook the French toast in batches to maintain the correct temperature.
