Ingredients
Scale
1/2 cup tahini
1/4 cup fresh lemon juice
2 tablespoons cold water (plus more to thin)
1 clove garlic, minced
1 teaspoon maple syrup (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Place the tahini, lemon juice, minced garlic, maple syrup (if using), salt, and pepper into a medium bowl.
Whisk the ingredients together vigorously. The mixture will seize up and become very thick initially.
Slowly drizzle in the cold water, one tablespoon at a time, while continuously whisking.
Continue whisking until the dressing emulsifies and reaches your desired creamy consistency. Add more water, one teaspoon at a time, if you prefer a thinner dressing.
Taste and adjust seasoning, adding more salt or lemon juice as needed.
Notes
If the dressing becomes too thick after storage, whisk in a few drops of warm water to restore the creamy texture.
For a garlicky variation, add 1/2 teaspoon of garlic powder instead of fresh garlic.
This dressing pairs well with roasted vegetables, grain bowls, or as a dip for falafel.
