Ingredients
Scale
1 cup raw cashews, soaked in hot water for 30 minutes
4 cups vegetable broth
1/4 cup white miso paste
3 tablespoons tahini
2 tablespoons soy sauce or tamari
1 tablespoon toasted sesame oil
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
1 teaspoon rice vinegar
1/2 teaspoon sugar or maple syrup
10 ounces ramen or udon noodles (check vegan status)
1 tablespoon neutral oil (like canola or grapeseed)
8 ounces shiitake mushrooms, sliced
2 cups chopped bok choy
4 scallions, sliced (for garnish)
Toasted sesame seeds (for garnish)
Instructions
Drain the soaked cashews thoroughly.
Combine the drained cashews, vegetable broth, miso paste, tahini, soy sauce, sesame oil, ginger, garlic, rice vinegar, and sugar in a high-speed blender. Blend until completely smooth and creamy. This is your soup base.
Cook the noodles according to package directions until al dente. Drain and set aside.
Heat the neutral oil in a large pot or Dutch oven over medium-high heat. Add the sliced mushrooms and sauté until browned, about 5 to 7 minutes.
Pour the blended soup base into the pot with the mushrooms. Heat gently over medium heat, stirring often. Do not boil the soup once the miso is added.
Add the chopped bok choy to the soup base and cook until wilted, about 2 minutes. Taste the broth and adjust seasoning if needed (add more soy sauce for saltiness or vinegar for brightness).
Divide the cooked noodles among four serving bowls.
Ladle the hot creamy soup base and vegetables over the noodles.
Garnish each bowl with sliced scallions and toasted sesame seeds before serving.
Notes
For an extra creamy texture without cashews, substitute the cashews with 1 cup of silken tofu.
If you prefer a stronger sesame flavor, add 1 teaspoon of ground sesame seeds to the blender mixture.
To make this soup gluten-free, use tamari instead of soy sauce and ensure your noodles are gluten-free rice noodles.
