- 2 lbs carrots, peeled and roughly chopped
- 1 large yellow onion, quartered
- 4 cloves garlic, unpeeled
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh ginger, grated
- 4 cups vegetable broth
- 1 (13.5 oz) can full-fat coconut milk
- 1 teaspoon maple syrup (optional)
- Fresh cilantro or parsley for garnish
- Preheat your oven to 400°F (200°C).
- Toss the chopped carrots, onion quarters, and unpeeled garlic cloves with olive oil, salt, and pepper on a baking sheet.
- Roast for 30 to 35 minutes, until the carrots are tender and slightly caramelized.
- Remove the garlic skins once cooled slightly.
- Transfer the roasted vegetables to a large pot. Add the grated ginger and vegetable broth.
- Bring the mixture to a simmer over medium heat and cook for 5 minutes to allow the ginger flavor to infuse.
- Carefully transfer the soup mixture to a high-speed blender. Add the full-fat coconut milk and maple syrup, if using.
- Blend until completely smooth and creamy. You may need to do this in batches.
- Return the soup to the pot and heat gently if needed. Do not boil after adding coconut milk.
- Taste and adjust salt or pepper as necessary.
- Serve hot, garnished with fresh herbs.
Notes
- For an even richer texture without coconut, substitute the coconut milk with 1 cup of soaked raw cashews blended with 1 cup of water.
- Roast the carrots until they are quite soft; this concentrates their natural sweetness, which balances the ginger spice.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
