Ingredients
Scale
12 oz pasta (penne, rotini, or linguine)
1 cup prepared roasted red pepper hummus
1/2 cup reserved pasta water
1/4 cup nutritional yeast
2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cherry tomatoes, halved
1/2 cup fresh spinach
Optional garnish: fresh basil, toasted pine nuts
Instructions
Cook the pasta according to package directions until al dente. Before draining, reserve at least 1/2 cup of the starchy pasta water. Drain the pasta and set aside.
Reduce the heat to low. Add the roasted red pepper hummus, nutritional yeast, lemon juice, salt, and pepper to the skillet. Stir well to combine.
Gradually whisk in the reserved pasta water, a few tablespoons at a time, until the sauce reaches a smooth, creamy consistency. You may not need all the water.
Add the cooked pasta to the sauce. Toss gently to coat every piece evenly.
Stir in the halved cherry tomatoes and fresh spinach. Cook for 1-2 minutes, just until the spinach wilts slightly.
Serve immediately. Garnish with fresh basil and toasted pine nuts if desired.
Notes
For a richer flavor, roast your own red peppers instead of using jarred.
If the sauce thickens too much upon standing, add a splash more hot pasta water to loosen it.
Add cooked chickpeas or white beans for extra protein.
