Ingredients
Scale
1 large sweet potato (about 1.5 cups cooked and mashed)
1/2 cup water or unsweetened plant milk
1/4 cup nutritional yeast
1 tablespoon lemon juice
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon turmeric (for color)
Pinch of smoked paprika
Instructions
Peel and chop the sweet potato into 1-inch cubes.
Steam or boil the sweet potato until very tender, about 10-15 minutes. Drain well.
Place the cooked sweet potato, water or plant milk, nutritional yeast, lemon juice, onion powder, garlic powder, salt, turmeric, and smoked paprika into a high-speed blender.
Blend on high until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
If the sauce is too thick, add more liquid, one tablespoon at a time, until you reach your desired consistency.
Taste the sauce and adjust salt or lemon juice as needed for a sharper, cheesier flavor.
Heat the sauce gently on the stovetop or use immediately over cooked pasta.
Notes
For a thicker sauce suitable for nachos, reduce the initial liquid to 1/4 cup.
If you do not have sweet potato, butternut squash works as a substitute, though the flavor profile will change slightly.
To make this sauce oil-free, simply omit any added fats; the sweet potato provides natural creaminess.
For macaroni and cheese, use approximately 1.5 cups of this sauce for every 8 ounces of cooked elbow macaroni.
