Ingredients

Scale
  • 8 ounces noodles (spaghetti or linguine work well)
  • 1 head of broccoli, cut into bite-sized florets
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1/4 cup soy sauce or tamari
  • 2 tablespoons maple syrup or agave
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley or green onions for garnish (optional)

Instructions

  1. Cook the noodles according to package directions. Add the broccoli florets to the boiling water for the last 3 minutes of cooking time to blanch them. Drain the noodles and broccoli well.
  2. While the noodles cook, prepare the sauce. In a small bowl, whisk together the soy sauce, maple syrup, rice vinegar, sesame oil, and red pepper flakes, if using.
  3. Heat the olive oil in a large skillet or pan over medium heat.
  4. Add the minced garlic to the skillet and cook for about 30 to 60 seconds until fragrant. Do not let the garlic burn.
  5. Add the drained noodles and broccoli to the skillet.
  6. Pour the prepared sauce over the noodles and vegetables.
  7. Toss everything together continuously until the noodles are evenly coated and the sauce has slightly thickened, about 1 to 2 minutes.
  8. Taste and add salt and pepper if needed.
  9. Serve immediately, garnished with fresh parsley or green onions if desired.

Notes

  • You can substitute the broccoli with another quick-cooking vegetable like bok choy or sliced mushrooms.
  • For extra flavor, you can add a teaspoon of grated fresh ginger to the garlic when sautéing.
  • If you prefer a richer sauce, add one tablespoon of peanut butter to the sauce mixture.
