Enjoy a delicious and vibrant vegan Mexican street corn, inspired by the lively flavors of elote. This plant-based version uses creamy vegan mayonnaise, savory nutritional yeast, and tangy coconut feta for a delightful dairy-free treat.

Ingredients

Scale
  • 4 ears of corn, husked
  • 1/2 cup vegan mayonnaise
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • Pinch of cayenne pepper (optional)
  • 1/4 cup crumbled coconut feta
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the corn, turning occasionally, until kernels are tender and lightly charred, about 8-10 minutes.
  3. While the corn grills, whisk together the vegan mayonnaise, nutritional yeast, lime juice, chili powder, smoked paprika, and cayenne pepper (if using) in a small bowl.
  4. Once grilled, carefully spread the vegan mayonnaise mixture evenly over each ear of corn.
  5. Sprinkle the crumbled coconut feta and chopped cilantro over the top.
  6. Serve immediately and enjoy!

Notes

  • You can also roast the corn in the oven at 400°F (200°C) for 20-25 minutes, turning halfway through.
  • For an extra spicy kick, add a pinch more cayenne pepper or a dash of hot sauce to the mayo mixture.
  • If you can’t find coconut feta, you can omit it or use a store-bought vegan feta alternative.
