Ingredients
Scale
1 pound cremini mushrooms, sliced
1 tablespoon olive oil
1 yellow onion, chopped
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 cup vegetable broth
1/4 cup dry red wine (optional)
1 cup full-fat vegan sour cream or cashew cream
2 tablespoons Dijon mustard
1 tablespoon soy sauce or tamari
Salt and black pepper to taste
12 ounces egg-free noodles (like wide egg noodles or fettuccine)
Fresh parsley, chopped (for garnish)
Instructions
Cook your noodles according to package directions. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Add mushrooms and cook until they release their liquid and start to brown, about 8-10 minutes.
Add onion to the skillet and cook until softened, about 5 minutes.
Stir in garlic and thyme. Cook for 1 minute until fragrant.
Pour in vegetable broth and red wine (if using). Scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
Reduce heat to low. Stir in vegan sour cream, Dijon mustard, and soy sauce. Mix well until the sauce is smooth and heated through. Do not boil once the cream is added.
Season the sauce with salt and pepper to your preference.
Add the cooked noodles to the skillet and toss gently to coat everything evenly in the sauce.
Serve immediately, garnished with fresh parsley.
Notes
You can substitute cashew cream for vegan sour cream for an even richer texture.
If you skip the wine, add an extra splash of vegetable broth for simmering.
Use a variety of mushrooms, like shiitake or oyster, for deeper flavor.
