Ingredients
Scale
1 (15-ounce) can chickpeas, rinsed and thoroughly dried
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
1/2 teaspoon turmeric powder
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 red onion, cut into thick wedges
1 red bell pepper, cut into 1-inch pieces
1 cup cherry tomatoes
For Serving: Pita bread, tahini sauce, chopped parsley, sliced cucumber
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
In a medium bowl, combine the dried chickpeas, olive oil, lemon juice, cumin, coriander, smoked paprika, garlic powder, cayenne pepper (if using), salt, and black pepper. Toss well until the chickpeas are evenly coated with the spices.
Spread the seasoned chickpeas in a single layer on one half of the prepared baking sheet.
Toss the red onion wedges, red bell pepper pieces, and cherry tomatoes with any remaining oil and spices from the bowl, or drizzle with a small amount of extra olive oil and a pinch of salt. Spread these vegetables on the other half of the baking sheet.
Place the sheet pan in the preheated oven and roast for 20 to 25 minutes.
After 15 minutes, gently toss the chickpeas and vegetables to promote even browning. Continue roasting until the chickpeas are slightly crisp and the vegetables are tender and lightly charred.
Remove from the oven. Serve the chickpea shawarma mixture immediately with warm pita bread, drizzled with tahini sauce, and topped with fresh parsley and cucumber slices.
Notes
Drying the chickpeas well before seasoning is key to achieving a crisp texture during roasting. Use a clean kitchen towel or paper towels.
For extra flavor, you can add 1/2 teaspoon of ground cinnamon to the spice mix.
If you do not have parchment paper, lightly grease the baking sheet with oil.
