Ingredients
Scale
1 tablespoon olive oil
1 large yellow onion, chopped
3 cloves garlic, minced
1 cup brown or green lentils, rinsed
1 (14.5 ounce) can diced tomatoes, undrained
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can corn, drained
4 cups vegetable broth
2 tablespoons taco seasoning (ensure it is vegan)
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt, or to taste
1/4 teaspoon black pepper
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Stir in the rinsed lentils, diced tomatoes, black beans, corn, vegetable broth, taco seasoning, chili powder, cumin, salt, and pepper.
Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 30 to 35 minutes, or until the lentils are tender. Stir occasionally to prevent sticking.
Taste the soup and adjust salt or seasoning as needed before serving.
Notes
Serve hot with toppings like sliced avocado, fresh cilantro, or vegan sour cream.
This soup freezes well; cool completely before transferring to freezer-safe containers.
If you prefer a thicker soup, mash about 1 cup of the cooked lentils against the side of the pot before serving.
