Ingredients
Scale
1/2 cup rolled oats
1 tablespoon chia seeds
1/2 cup plant milk (soy or almond recommended)
1/4 cup full-fat coconut cream (refrigerated overnight)
1 teaspoon maple syrup
1/2 teaspoon vanilla extract
1/2 cup fresh or frozen strawberries, mashed or finely chopped
Pinch of salt
Instructions
In a jar or container, combine the rolled oats, chia seeds, plant milk, maple syrup, vanilla extract, and salt. Stir well to mix.
Gently fold in the mashed strawberries.
Spoon the thick coconut cream layer on top of the oat mixture. Do not stir it in completely; you want distinct layers for the ‘cream’ effect.
Seal the container and refrigerate for at least 6 hours, or preferably overnight.
In the morning, stir the oats gently to incorporate the coconut cream layer, creating a thick, creamy texture. Add a splash more plant milk if the mixture is too thick for your preference.
Serve cold.
Notes
For the thickest cream, chill a can of full-fat coconut milk overnight without shaking it. Scoop only the solid cream layer from the top.
If using frozen strawberries, they will release more liquid, which can help soften the oats.
For extra protein, add 1 scoop of unflavored or vanilla vegan protein powder before chilling.
