  1. Roast the sweet potato and broccoli: Toss diced sweet potato and broccoli florets with a little olive oil, salt, and pepper. Spread on a baking sheet and roast at 400°F (200°C) for 20-25 minutes, or until tender and slightly browned.

  3. Assemble the bowl: Divide the cooked quinoa among bowls.
  4. Arrange the roasted sweet potato, roasted broccoli, roasted chickpeas, shredded red cabbage, and shredded carrots on top of the quinoa.
  5. Sprinkle with pumpkin seeds.
  6. Drizzle generously with lemon-tahini dressing.

Notes

  • Feel free to substitute your favorite grains like brown rice or farro.
  • Add other roasted vegetables like bell peppers, Brussels sprouts, or cauliflower.
  • For extra protein, add baked tofu or edamame.
  • Adjust dressing to your taste; add more lemon juice for tanginess or a touch of maple syrup for sweetness.
