Ingredients

Scale
  • 1 cup brown or green lentils, rinsed
  • 3 cups vegetable broth or water
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon sesame oil
  • 1 large carrot, julienned
  • 1 cup shredded red cabbage
  • 1 cup shredded green cabbage
  • 1 red bell pepper, thinly sliced
  • 4 green onions, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped fresh mint (optional)
  • For the Peanut Sauce:
  • 1/2 cup smooth peanut butter
  • 1/4 cup warm water
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon fresh lime juice
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger

Instructions

  1. Combine the rinsed lentils, vegetable broth, soy sauce, and sesame oil in a saucepan.
  2. Bring the mixture to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until the lentils are tender but not mushy. Drain any remaining liquid.
  3. While the lentils cook, prepare the peanut sauce. Whisk together all peanut sauce ingredients in a small bowl until smooth. Add more warm water if needed to reach your desired drizzling consistency.
  4. In a large bowl, combine the julienned carrot, red cabbage, green cabbage, red bell pepper, green onions, cilantro, and mint.
  5. Add the warm cooked lentils to the bowl of vegetables.
  6. Pour the peanut sauce over the lentil and vegetable mixture. Toss gently to coat everything evenly.
  7. Serve immediately while the lentils are warm.

Notes

  • You can use quick-cooking red lentils, but adjust the cooking time to avoid them becoming too soft.
  • For extra crunch, add chopped peanuts as a topping.
  • If you prefer a spicier sauce, add a dash of sriracha or chili garlic sauce to the peanut dressing.
  • This dish tastes great served over a bed of rice or mixed greens if you want a heartier bowl.
