2 pounds Yukon Gold potatoes, quartered
1/2 cup mayonnaise
1/4 cup Dijon mustard
2 tablespoons apple cider vinegar
1 tablespoon olive oil
1/4 cup finely chopped red onion
2 tablespoons chopped fresh parsley
Salt and black pepper to taste
Instructions
Place potatoes in a large pot and cover with cold water. Add a generous pinch of salt.
Bring to a boil over high heat, then reduce heat to medium and simmer for 15-20 minutes, or until potatoes are fork-tender.
Drain potatoes well and return them to the pot.
While potatoes are still warm, gently mix in mayonnaise, Dijon mustard, apple cider vinegar, and olive oil.
Stir in red onion and parsley.
Season with salt and pepper to taste.
Serve warm.
Notes
For a richer flavor, you can add a tablespoon of butter when mixing the dressing.
If you prefer a less tangy salad, reduce the amount of apple cider vinegar.
