Ingredients
Scale
1 cup rolled oats
1/2 cup white chocolate chips
1/2 cup almond butter (or preferred nut butter)
1/4 cup ground flaxseed or chia seeds
1/4 cup dried, crushed raspberries (freeze-dried work best)
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
Instructions
Place the rolled oats in a food processor and pulse until they form a coarse flour.
Add the almond butter, honey (or maple syrup), and vanilla extract to the food processor. Blend until the mixture sticks together.
Transfer the mixture to a bowl. Fold in the white chocolate chips and crushed freeze-dried raspberries by hand.
If the mixture seems too dry, add a small amount of water or more nut butter, one teaspoon at a time, until it holds its shape.
Roll the mixture into small, bite-sized balls (about 1 inch in diameter).
Place the energy bites on a parchment-lined plate or tray.
Refrigerate for at least 30 minutes to firm up before serving.
Store leftovers in an airtight container in the refrigerator.
Notes
Using freeze-dried raspberries provides the best flavor and texture without adding excess moisture.
You can substitute the flaxseed with chia seeds for a similar binding effect.
If you prefer a less sweet bite, reduce the honey or maple syrup slightly.
