Ingredients
Scale
2 large sweet potatoes
1.5 cups shredded cooked chicken
1/2 cup sugar-free BBQ sauce
1/4 cup finely chopped red onion
2 tablespoons chopped fresh cilantro
1 tablespoon olive oil
Salt and black pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Wash the sweet potatoes and prick them several times with a fork.
Bake the sweet potatoes for 45-60 minutes, or until tender when pierced with a fork.
While the sweet potatoes are baking, prepare the chicken filling. In a medium bowl, combine the shredded chicken and BBQ sauce. Mix well.
Stir in the chopped red onion and half of the cilantro. Season with salt and pepper if needed.
Once the sweet potatoes are tender, carefully cut them in half lengthwise.
Gently scoop out some of the flesh from each half, leaving a border to create a “boat.” Mash the scooped-out flesh with a fork and mix it into the chicken filling.
Spoon the chicken mixture back into the sweet potato shells.
Drizzle with a little olive oil.
Return the stuffed sweet potatoes to the oven for another 10-15 minutes, or until heated through and slightly browned on top.
Garnish with the remaining fresh cilantro before serving.
Notes
Ensure your BBQ sauce is Whole30 compliant (no added sugar).
You can cook the chicken in advance or use leftover rotisserie chicken.
Feel free to add other vegetables like bell peppers or corn to the filling.
