Prepare this simple, colorful fruit salad featuring seasonal winter produce and a zesty honey-lime dressing. It is quick to assemble and perfect for holiday gatherings or a healthy snack.

Ingredients

Scale
  • 2 large Navel Oranges, peeled and segmented
  • 1 cup Pomegranate Arils
  • 2 firm Pears (like Bosc or Anjou), cored and diced
  • 3 Kiwis, peeled and sliced
  • 2 crisp Apples (like Honeycrisp or Fuji), cored and diced
  • 1/4 cup fresh Lime Juice
  • 2 tablespoons Honey
  • 1 teaspoon Lime Zest

Instructions

  1. Prepare all the fruit: peel and segment the oranges, dice the pears and apples, and slice the kiwis. Place all prepared fruit into a large mixing bowl.
  2. In a small bowl, whisk together the lime juice, honey, and lime zest until the honey is fully dissolved. This is your dressing.
  3. Pour the honey-lime dressing over the fruit mixture.
  4. Gently toss the fruit until everything is lightly coated with the dressing.
  5. For best flavor, cover the bowl and chill in the refrigerator for at least 15 minutes before serving.

Notes

  • To keep the apples and pears from browning, toss them immediately with a splash of the lime juice before adding the other fruits.
  • For a festive look, use a mix of red and green apples.
  • If you prefer a thinner dressing, slightly warm the honey before mixing it with the lime juice.
