Make a rich, creamy Basque Burnt Cheesecake with a deeply caramelized top. This simple recipe requires few ingredients and no water bath for a velvety center.

Ingredients

Scale
  • 900 grams full-fat cream cheese, softened
  • 300 grams granulated sugar
  • 6 large eggs
  • 600 ml heavy cream (35% fat)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 30 grams all-purpose flour

Instructions

  1. Preheat your oven to 200 degrees Celsius (400 degrees Fahrenheit). Line a 9-inch springform pan with two large sheets of parchment paper, allowing the paper to overhang significantly on all sides. Do not worry about neatness; the crinkled edges help create the signature look.
  2. In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Scrape down the sides of the bowl.
  3. Add the sugar and beat until just combined. Do not overmix.
  4. Add the eggs one at a time, mixing briefly after each addition until incorporated.
  5. Slowly mix in the heavy cream, vanilla extract, and salt until the batter is uniform.
  6. Sift the flour over the batter and gently fold it in using a spatula until no streaks of flour remain. The batter will be thin.
  7. Pour the batter into the prepared pan.
  8. Bake for 50 to 60 minutes. The top should be very dark brown, almost black, and the edges should look set. The center should still wobble significantly, like thick pudding.
  9. Remove the cheesecake from the oven. It will deflate as it cools. Let it cool completely at room temperature for at least 3 hours.
  10. Chill the cheesecake in the refrigerator for at least 6 hours, preferably overnight, before serving.

Notes

  • For a loaf pan variation, use an 8×4 inch loaf pan lined with parchment paper and reduce the baking time by approximately 10 to 15 minutes.
  • The high heat creates the burnt top and the creamy, velvety center. Do not try to bake it until the center is firm.
  • Use room temperature ingredients for the smoothest batter.
