Ingredients
Scale
1 cup (2 sticks) unsalted butter, softened to room temperature
4 cups powdered sugar, sifted
1 tablespoon pure vanilla extract
3 to 4 tablespoons heavy cream or whole milk
1/4 teaspoon salt
Instructions
Place the softened butter into the bowl of a stand mixer fitted with the paddle attachment. Beat the butter on medium speed until it is completely smooth and creamy, about 2 minutes. Scrape down the sides of the bowl.
Gradually add the sifted powdered sugar, one cup at a time, mixing on low speed until just combined after each addition. Scrape down the sides frequently.
Add the vanilla extract and salt. Increase the mixer speed to medium-high and beat for 3 minutes until the mixture is lightened in color and fluffy.
Add 3 tablespoons of heavy cream or milk. Beat on medium-high speed for another 3 to 5 minutes until the vanilla buttercream frosting is very light and fluffy. This extended whipping time is key for a smooth texture.
Check the consistency. If the frosting seems too stiff for spreading or piping, add the remaining 1 tablespoon of cream, one teaspoon at a time, until you reach your desired consistency for your homemade vanilla cake frosting.
Use immediately to frost cakes or cupcakes, or store covered at room temperature for up to 2 days.
Notes
Room temperature butter is essential for smooth buttercream. It should yield slightly when pressed but not be melted or greasy.
Sifting the powdered sugar prevents lumps, which helps you achieve a smooth buttercream finish.
If your frosting seems too thin after adding the liquid, add a quarter cup more powdered sugar and beat again.
For a stronger vanilla flavor, use vanilla bean paste instead of extract.
