This recipe provides instructions for making a classic American vanilla buttercream that is light, fluffy, creamy, and stable enough for piping and decorating cakes and cupcakes.

Ingredients

Scale
  • 1 cup unsalted butter, softened to room temperature
  • 4 cups powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 2 to 4 tablespoons heavy cream or milk

Instructions

  1. Place the softened butter in the bowl of a stand mixer fitted with the paddle attachment. Beat the butter on medium speed until it is smooth and creamy, about 2 minutes. Scrape down the sides of the bowl.
  2. Gradually add the sifted powdered sugar, one cup at a time, mixing on low speed until incorporated after each addition.
  3. Once all the sugar is added, increase the speed to medium-high and beat for 3 minutes until the mixture is light and fluffy. Scrape down the sides again.
  4. Add the vanilla extract and salt. Beat for 1 minute to combine.
  5. Add the heavy cream or milk, one tablespoon at a time, beating well after each addition until you reach your desired consistency. For piping, use less liquid (2 tablespoons). For spreading, you may need up to 4 tablespoons.
  6. Beat the frosting on medium-high speed for an additional 3 to 5 minutes. This extended beating time incorporates air, making the buttercream very fluffy and stable.
  7. Use immediately for frosting cakes, cupcakes, or cookies.

Notes

  • For the best texture, ensure your butter is truly softened but not melted. It should yield slightly when pressed.
  • If the frosting seems too stiff after adding the liquid, continue beating for a few extra minutes; the air incorporation often lightens it significantly.
  • If the frosting is too soft, add powdered sugar 1/4 cup at a time until firm enough for piping.
  • If the frosting appears grainy, beat it longer on medium-high speed to dissolve the sugar crystals.
